I don’t know about you, but I love breakfast. And when I can find ways to simplify breakfast, I am ALL IN. That’s what these time saving breakfast recipe ideas are all about.

If you’re like me, when the kids go back to school, it seems impossible to get them up, dressed and out the door PLUS find time to give them a delicious breakfast so they won’t be hungry before lunch.

Enter the make ahead breakfast recipe ideas

I started collecting several breakfast recipe ideas a few years ago so I could use to make a quick breakfast for busy school mornings. These helped to make my life simpler, and because I’m all about making things SIMPLE – I want to share these with you.

We all want ways to make our lives easier, especially during the morning rush hour – and I’m not talking about the one on the local interstate! These time saving breakfast recipe ideas will give you those few extra minutes in the morning, but still make sure your kids are fed and happy on the way to school.

Sausage Egg Casserole. We’ve all had this delicious casserole that combines sausage, eggs and cheese. Make it the night before, put in the fridge, and the next morning, you can pop it in the oven to bake while everyone gets ready to face the day. You’ll have a warm cheesy breakfast for everyone to eat.

Breakfast burritos. You can make a great version of this easy to eat breakfast for your family. Scramble your eggs with ham or sausage and put in a container in the fridge. On the morning you want to make them for breakfast, warm up the filling, and add to a tortilla with cheese. These can even be eaten “on the go” for the mornings you might be running late.

Overnight oatmeal. Put your slow cooker to good use by making oatmeal. Start it the night before by adding 3 cups water, 1 cup rolled oats (old fashioned oats), ¼ cup heavy cream and ¼ cup brown sugar. You can add extra liquid (milk or cream) if you like your oatmeal not as thick. Cook on low overnight, and the next morning breakfast is ready. Top with your favorite fruit.

Cookies for breakfast. I can hear you now – WHAT?? Not in my house! But if you use a few minutes to make up some High Protein Breakfast Cookies, then you can give your kids cookies for breakfast and feel good about yourself – and your kids will love them too! Plus they are quick to grab and go when you are rushing out the door!

Banana Bread or Muffins. Everyone has a favorite banana bread recipe. And there are always ripe bananas hanging around on the kitchen counter. Make up a batch ahead of time and then warm in the microwave for a few seconds for a quick delicious breakfast.

Granola Bars. Make my quick No Bake Peanut Butter Chocolate Chip granola bars ahead of time, then cut them up and stick in a plastic baggie. On those mornings you don’t have time to make anything, grab a one of those baggies and out the door you go with a yummy breakfast treat.

Sausage biscuits. On the weekend, fry up slices of bulk sausage. Pop them in the fridge and you’re ready to go. On Sunday, make a batch of homemade biscuits,while everyone is getting dressed and warm the sausage. Put them together for a hand held breakfast that can be eaten on the go.

Favorite muffins. We all have our favorite muffin recipe. Whether it is blueberry, strawberry or even my Raisin Bran muffins, you can make up a bunch of muffins one day, store them in individual baggies, and then have them ready to go for lunch boxes, snacks or even a quick out the door breakfast on hurried mornings.

Sausage gravy and biscuits. You may think this is too involved for school mornings, but do what I do and make it ahead. Use a few minutes on the weekend and make up a batch of sausage gravy. Put it in a container, and then all you have to do is make up some homemade biscuits, warm up some gravy and BOOM – deliciously warm breakfast in seconds!

Fruit and yogurt. Seems obvious but we sometimes forget about mixing fresh or frozen fruit with homemade yogurt for a quick and healthy breakfast. Make a large batch ofyogurt in a slow cooker and divide it up to make your own fruit and yogurt cups.

Those are just a few of my best – and easiest – breakfast recipe ideas. I use these all the time to get my kids fed and out the door quickly.
