Baked Mini Cake Doughnuts with Maple Glaze {Recipe} (1)

On my recent trip to the Wilton headquarters (which included a mini shopping spree at the annual Wilton tent sale) I picked up two mini doughnut pans. I usually try to steer clear of “one use” pans, but they werejust too cute to pass up! And I love mini desserts so much I think I’ll find plenty of reasons to make good use of my new pans. In fact, just this week a friend called to see if I could help bring some doughnuts to church on Sunday as a special “Doughnuts for Dads” after church treat (in celebration of Father’s Day). Of course I canbring doughnuts… and I’ll make them myself!

The Wilton pan comes with a recipe right on it, so I thought that would be a good place to start. I gave it a practice run and I’m quite happy with it. I will be experimenting with other recipes as time goes on, but this was a nice starting point.

Just made these with a normal-sized doughnut pan- it made 8. They’re cooling right now, will glaze them later, but I tried one that broke (forgot to grease the pan on the first batch, the rest came out ok with a little coaxing from a small spatula, but one broke on the way out) and it was very nice. I don’t have maple extract, going to do almond. For future reference, do you think it would work with maple syrup? I’m not sure the texture would be right for a glaze.

FAQs

What is maple glaze made of for donuts? ›

The glaze is pretty simple. Butter, real maple syrup, powdered sugar, and then plenty of vanilla. Not too strong, not too sweet, but just right. Especially when dipped into or drizzled over warm maple doughnuts.

Can you bake donuts instead of frying? ›

Spoon the batter into the lightly greased doughnut pans, filling the wells to about 1/4" shy of the rim. Bake the doughnuts for 10 to 12 minutes. Remove them from the oven, and wait 5 to 7 minutes before turning them out of the pans onto a rack.

Why are my mini donuts not fluffy? ›

Why are my donuts tough? This could be due to a few things - either your oil temperature isn't hot or cool enough, or you over or under proofed the donut dough, meaning that it did not puff up in the oil. Check the oil temperature before each batch and make sure the donuts are properly proofed when you fry them.

What is Krispy Kreme donut glaze made of? ›

Can I use maple syrup instead of honey in a glaze? ›

You can usually count on a honey substitute to work well in baked good recipes. If the honey you're replacing is in a sauce, a glaze or marinade for meat or vegetables, use maple syrup in its place. It'll act in much the same way, even if it changes the flavor of the dish a bit.

Which is better, baked or fried donuts? ›

While many prefer the light and crispy texture of a fried donut, leaving the deep fryer in the cabinet and baking your cake donuts instead makes for healthier, less oily donuts. It's also safer and easier to clean up, given that you don't have to deal with lots of hot oil.

Types of Donuts

Yeast donuts are leavened with yeast (shocker!), and are light and airy. Cake donuts are chemically leavened using baking powder or baking soda. These donuts have a more dense, chewy, cake-like crumb. These donuts are often baked, as shown here, but may also be fried.

What is the best flour for donuts? ›

Use real cake flour – not DIY cake flour!

DIY substitutions don't really cut it, and AP flour will not create doughnuts with that same soft texture. Also, bleached cake flour will work best. Unbleached (like King Arthur Baking) won't absorb as much moisture, and you may end up with doughnuts that crumble while frying.

What is the secret for soft doughnuts? ›

There's only one way to make doughnuts even softer and fluffier and that is by scalding some of the flour. Scalding is a technique used to not only make bread softer, but also to make it stay soft for longer. You can use it for pretty much any recipe you like.

What makes Krispy Kreme donuts so fluffy? ›

Mixing and Extruding

A batch of original glazed starts with Krispy Kreme doughnut mix, water and yeast, the same single-cell fungi used to make bread rise. The yeast is what makes the original glazed so light -- it puffs the dough up with air, so it's not dense like a cake doughnut (more on this later).
