Frosted Circus Animal Cookies + pie = I’m a genius.
Or maybe it’s more like someone with an abnormal affection for sweetsand the palette of a 6-year old. You decide.
I’m leaning more toward genius though.
Circus Animal Cookies have and ALWAYS WILL BE my favorite store-boughtcookie. I’m not sure if it has to do with the fact that they’re pink and white cookies (my favorite color scheme) coated in sprinkles (my favorite food group), or if it’s because I suffer from terminal Patricia Pan syndrome (the girl version of Peter Pan syndrome) and they take meback tomychildhood.
Ever since I made myOreo Truffle Cream Pie, I just knew I had to make a Circus Animal Cookie version. And if you were just as obsessed withmy Circus Animal Truffle Bark as I was, then you’re definitely in for a treat. Consider the trufflebark the gateway drug to this pie.
It’s just as perfect as I’d imagined…
A sweet cookie crust made with GoldenBirthday Cake Oreos…
A thick and wonderfully rich truffle layer made with only two ingredients–Circus Animal Cookies and cream cheese!
A fluffy and oh soooooo creamy layer of white chocolate mousse…
And just for the sake of prettiness, a few dollops of freshly whipped cream, some rainbow sprinkles, and a cutie patootie parade of Circus Animal Cookies.
This pie is basically my 6-year old self’s dream come true. This is THE pie I would’ve wished foratevery Thanksgiving, Christmas, Birthday, Kwanzaa, Labor Day, Canada Day (who cares if I’m an American?)–basically EVERY single holiday of the year.
When it comes to pies, the crusts tend to take the backseat to the filling…this crust is different. The Golden Birthday Cake Oreos definitely don’t go unnoticed since they add that sugar-highcake batter sweetness which complements both the truffle and mousse filling really well. The crust is almost like a treat on it’s own, which I guess when you consider the fact that it’s made of crushed Golden Birthday Cake Oreos and butter, then yes, it is a treat!
The truffle filling tastes like the lovechild of Circus Animal Cookies and cheesecake–soooo flippin’ GOOD!And the white chocolate mousse adds the nice light and creamy element!
Oh, and don’t think that this pie just for the kids…it’s so totally adult-worthy.

Ingredients
- 25 Golden Birthday Cake Oreos
- 4 Tablespoons butter melted
- 1 (12 oz) bag Circus Animal Cookies, divided
- 8 ounces cream cheese divided
- 2 cups heavy cream
- ½ cup powdered sugar
- 1 ½ teaspoons vanilla
- 1 (3.56 oz) box instant white chocolate pudding, dry*
- ½ cup milk
- Sprinkles
Instructions
Crush the Oreos in a food processor until finely ground. Pour into a mixing bowl with the butter and use a fork to combine. Press mixture into the bottom and up the sides of a 9-inch pie pan. Refrigerate crust while you work on the truffle layer.
In a food processor, pulse 10 ounces of the animal cookies until broken into fine crumbs. Add 5 ounces of the cream cheese and continue pulsing until well blended. Spread truffle mixture evenly into the crust. Return to the refrigerator.
In the well-chilled bowl of a stand mixer fitted with a whisk attachment, beat the heavy cream until soft peaks form. Add powdered sugar and vanilla, and continue whipping until stiff peaks form. Transfer whipped cream to another bowl and place in refrigerator to keep chilled.
Return bowl to mixer. Switch whisk attachment out and replace with paddle attachment. Beat the remaining 3 ounces of cream cheese and pudding mix together until combined. Gradually add the milk, a little at a time, allowing mixture to come together after each addition.
Remove bowl from the mixer and fold in about 3/4 of the whipped cream until just combined. Pour filling over the truffle layer and smooth out the top.
Transfer the reserved whipped cream to a pastry bag or small ziploc bag with the tip cut off, and decorate the pie as desired. Garnish with the remaining animal cookies and sprinkles*. Refrigerate for at least 4 hours before serving.
Notes
*If you can't find, or don't have access to the white chocolate pudding mix, vanilla pudding mix would work too!
*If you're adding sprinkles like I did, I would suggest adding them just before serving since they tend to bleed into the whipped cream after about an hour.
