How to Make Loaded Crock Pot Potato Soup

ThisCrock Pot Potato Soup was voted Battle Soup Winner by our You Tube Community so Mikey made a video for it.

Ever since Aunt Lou shared the ever popular Crock Pot Potato Bacon Soup, we have been on a quest to find more great potato soup recipes. Through trial and error (and we do mean LOTS of error) we have tested numerous recipes and many came up short. Then we found this fantastic loaded potato soup inAmerica’s Test Kitchen’sSlow Cooker RevolutionCrock Pot Potato Soup - Recipes That Crock! (3). You might recall we recently found a Crock Pot Tomato Soup recipe that knocked our socks off in theirSlow Cooker Revolution Volume 2 (The Easy Prep Edition), so we were hopeful.

We were not disappointed whatsoever.Cook this one in your crock pot and it will fill your whole house with the most wonderful aroma! We shared it with some friends and they were instant lovers of it! The soup itself is very savory and full of flavor. Unlike a lot of cheesy potato soups, the cheese in this recipe did not overpower the rest of the soup, but rather added to the complexity of the flavors.

Notes on Crock Pot Potato Soup

  • This recipe does great in any 6 qt slow cooker. However, since this soup has a precooking step and because it has a cream and cheese base, we recommend this stove top safe slow cooker that has a great non-stick surface. The crock can go straight from the browning step on the stove into the slow cooker unit without dirtying another dish and the non-stick surface is perfect for cream based cheesiness that tends to stick in other slow cookers.

I pinned this a couple weeks ago, but finally made it today to have for dinner and it was absolute perfection! Great consistency (sporadically used an immersion blender to make it creamy with some chunks still), and awesome flavor!! A definite crowd-pleaser 🙂 I’ll need to check out more of your recipes if they’re as great at this one!

      Hi Rebecca-
You could I suppose but the soup turns out pretty smooth on its own. There are some chunks of potato, but we like it that way. Either way, I hope you enjoy it 🙂

I prefer smooth creamy soups. I don’t really go for chucks in cream soups. Thanks – I cannot wait to try it. :oD

Hi Katy- Without trying it first, I am not sure. I would be afraid of the soup texture suffering or it separating after freezing. You might have better luck freezing one of our tomato-based soups

FAQs

How do you thicken potato soup in a crock pot? ›

Evaporated Milk + Cornstarch.

Forget crockpot potato soup with heavy cream. Instead, stir a slurry of cornstarch and evaporated milk directly into the slow cooker. It is the best way to thicken potato soup (or Mushroom Soup too)!

How long does it take for potatoes to get soft in crockpot on high? ›

To a 6-quart slow cooker, add the potatoes, olive oil, garlic, and salt, stirring to combine. Cover and cook until the potatoes are tender, about 3 to 4 hours on high, or 5 to 6 hours on low.

Which potatoes hold up best in soup? ›

ANSWER: Waxy potatoes or those called boiling potatoes stand up well in soups and stews. These have thin skin and are high in moisture and low in starch. Potatoes that are low-starch and high-moisture hold together better. Yukon Gold potatoes are on the medium-starch side and will hold their shape in soups.

Does cream cheese thicken potato soup? ›

Cream cheese can be a delicious and tangy thickener for mashed potatoes so it stands to reason that it can also be used to add body to your favorite silky potato soup recipes — right? The answer is yes. It only works well if you do it carefully, though.

Why isn't my potato soup creamy? ›

Why isn't my potato soup creamy? Most creamy soups require you to add dairy of some sort into it. If you're finding your soup is too thin adding milk, add in cream instead, or whole milk.

Why are my potatoes still hard after cooking in the crockpot? ›

Insufficient Liquid: If there wasn't enough liquid in the crockpot, it could have caused uneven cooking. Potatoes need to be fully submerged in liquid to cook evenly. Old Potatoes: Very old or stored potatoes can become starchy and may not soften as well during cooking. It's best to use fresh, firm potatoes.

Why are my potatoes not getting soft in the crockpot? ›

Cut Potatoes Properly: Cut the potatoes into larger chunks rather than small pieces. This can help them retain their shape and texture better during the long cooking process. Adjust Liquid Amount: Potatoes release moisture as they cook, so be cautious with the amount of liquid added to the crockpot.

When should I add potatoes to slow cooker? ›

Tender vegetables such as zucchini and beans can be added to your dish in last ¾ - 1 hour of cooking when cooking on High, or 2 hours if cooking on Low. Hard, starchy vegetables like potato and carrots are best added around 3 hours before the meal is done if cooking on High, and 4 hours on Low.

How do you doctor up bland potato soup? ›

Your potato soup is bland? Try adding a little more salt. That's usually the answer to any issue of blandness, no matter the recipe in question. How do you blend potato soup without it being gummy? ›

What to do if my potato soup is too watery? ›

Add Flour Or Cornstarch

You can thicken soup by adding flour, cornstarch, or another starchy substitute. For the best results, never add flour or cornstarch directly to your soup. If you do, it will clump up on top. Instead, ladle a small amount of broth into a separate bowl and let it cool.

How do you fix watery potato soup? ›
