Ever since I started trying to eat healthier and incorporating a ketogenic diet into our lifestyle, I’ve been on a quest to find genuine recipes that my family will love. One of my hubby’s favorite holiday flavors is eggnog and one of our favorite cookies that incorporates this rich seasonal flavor are these Super Soft Egg Nog Cookiesthat I shared with you a few years ago.

When I was contacted and asked to consider participating in the Steviva Holiday Keto Blogger Recipe Challenge, I just knew I wanted to make over mySuper Soft Egg Nog Cookies recipe and that’s exactly what I did!

I haven’t calculated the nutritional values yet, but you can rest assured that by using almond and coconut flour instead of white flour and substituting the granulated and powdered or confectioners sugars with Steviva™ granulated and powdered sweeteners, you’re gonna save a lot of calories.

Steviva has developed safe, low glycemic, low caloric sweeteners thattaste and act just like sugar. Where were these products when I first tried low carb dieting 20 years ago?

Keto Eggnog Cookies Recipe with Eggnog Glaze

Keto Eggnog Cookies Recipe (2)

The original Egg Nog Cookies Recipe included frosted cookies. I chose to use an egg nog glaze on these cookies instead. Sometimes all that frosting was just a bit much. Unless, of course, you have an insatiable sweet tooth like my husband. If you’d like to try them frosted, read on….

Keto Cream Cheese Egg Nog Frosting

      Keto Eggnog Cookies Recipe (9)

If you’d like to try these cookies with a frosting instead of the glaze, then I’ve got an amazing recipe for you. Instead of just whipping up some cream cheese with your sugar alternative, we’re gonna add a little butter, egg nog and rum extract.

The butter kind of takes the edge (tang) out of the cream cheese frosting and renders a smooth, creamy and perfectly naturally sweet version of cream cheese frosting that you grew up with. Only better!

      Notes

      Makes about 2 cups.

These Keto Eggnog Cookies turned out super soft and a wonderful nutty treat. You can definitely taste the hint of coconut from the coconut flour and the nutty taste from the almond flour. There’s also a hint of eggnog and vanilla. The Steviva Brand of sweeteners worked perfectly in this recipe, without the aftertaste you get from artificial sweeteners.

      FAQs

How long does homemade eggnog last? ›

      Cover and refrigerate.

The more liquor you add, the longer it will keep — non-alcoholic eggnog should be consumed within 1 day; eggnog with 1/2 to 1 cup of liquor will keep for several days; and eggnog with 1 1/2 cups of liquor will keep for several weeks and continue aging and thickening quite nicely.

What do you mix eggnog with? ›

While brandy is the most traditional alcohol to pair with eggnog, according to traditional recipes, you can also use a mixture of dark rum and Cognac. If you like your eggnog with more of a kick you can also add bourbon, but we recommend sticking to rum and Cognac to preserve the 'nog's flavors.

How do you thicken eggnog? ›

Adding Xanthan Gum. Xanthan gum is an optional ingredient, and it's only purpose is to add a little body and thickness to your drink. This is a tricky ingredient and it's very easy to overuse it. If you stick to the quantities I've suggested your drink will come out perfect.

How do you fix store bought egg nog? ›

Aim for a ratio of about five-to-one of eggnog to your selected spirit for the best flavor. For each 8-ounce glass, add one shot (1.5 ounces) of alcohol.

Can egg nog go bad? ›

Consuming store-bought eggnog that has been open for more than 8 days may pose a risk of bacterial contamination. Even if it tastes fine, bacteria may be present, leading to foodborne illnesses.

How do you know if eggnog has gone bad? ›

But, you don't have to be a food scientist to figure out if your eggnog has gone bad. If it is lumpy (ew), has a sour and unpleasant odor, or if it has lost its color and has turned from beige yellowish to another hue, it's time to throw it out. But, don't be disheartened if you do have to pitch your box of nog.

How much alcohol is in eggnog? ›

Alcohol: If you want to add alcohol to your eggnog, start with ¼ cup brandy, bourbon, rum or whisky added at the same time as the vanilla, or after cooling the eggnog. Add more to taste, if desired.

What is the best liquor to mix with eggnog? ›

      Rum Eggnog

While it was very subtle, it was a bit more pronounced on the back end than the brandy. Overall, the eggnog was delicious and just sweet enough so you could taste that there was alcohol beyond the creamy egg mixture.

What is the best rum to use for eggnog? ›

      Chairman's Reserve Spiced Rum

"When choosing a rum, I personally find a spiced rum to be the best for the flavors incorporated in eggnogs," he said. "Chairman's Reserve Spiced Rum is best for its quality and flavor profile.”

Why is my homemade eggnog so thick? ›

If you over-cook the eggnog, it'll thicken too much (like custard). And if you're cooking it to be food-safety conscious, then you'll want to ensure that you reach your desired temperature. Again, I highly recommend using a digital thermometer.

What makes eggnog taste better? ›

It depends on the recipe you follow and your preferences, but there are some liquors that taste better in the drink. For example, brandy, rum, bourbon, and cognac match wonderfully with eggnog.

Why is my homemade eggnog lumpy? ›

There is a high possibility it can get curdled slightly at 2 stages, one is when you are cooking the egg yolk and the milk mixture on the stove. And the other stage is when adding alcohol into the mix. If this happens don't worry, just blend it in a blender until smooth.

Why do they stop selling eggnog? ›

Most plants keep producing eggnog through New Year's, and start dumping their unsold product in January. Although associated with the holidays, eggnog doesn't need to be seasonal. Dairy plants could produce small batches of eggnog off-season for hard-core nogheads, but they don't because it's not cost-effective.
