How to choose pig tripe

If you feel that the tripe has blood clots or induration, it also shows that it is not so fresh. Finally, you can judge from the smell. How to clean pig tripe

  1. Rinse the surface of the pig tripe with running water and put it in a bowl.
  2. Add flour, and salt and knead it repeatedly. Turn over the inner layer of the pig tripe to clean the mucus. Then wash it with running water.

  • 500 g pig tripe
  • 1 shortpiece ginger sliced
  • 5 red dates
  • 15-20 goji
  • 1.5 L water

Seasoning

  • 1 tsp. salt
  • ½ tsp. white pepper

Ingredients for blanching pig tripe

  • 1 short piece ginger sliced
  • 1 tbsp. Chinese cooking wine

Ingredients for cleaning pig tripe

  • ½ cup wheat flour
  • 50 ml water
  • 2 tbsp. salt

Instructions

Cooking method:

  • Wash the pig tripe with the cleaning ingredients

  • Cut the chicken meat, put the chicken meat and pig tripe into the pot with cold water, put the sliced ginger and Chinese cooking wine in the pot and blanch

  • lTake the pig tripe out, wash it cleanly and cut it into large pieces(the sliced ginger should be discarded)

  • lHeat the oil, add the sliced ginger, then addthe pig tripe and white pepper and stir-fry them. Add the boiled water, red dates and goji and boil for 3minutes under high heat.

  • lPour the above soup into the pressure cooker, add chicken meat, cook for 10minutes, season with salt.

Tips:

  • If the soup is not thick enough after being cookedin the pressure cooker, you can boil the soup under high heat for 10minutes additionally.

  • Heat the oil in the pot. Addthe soybean paste, ginger,garlic, dried chilies,Sichuan peppercorns,and capsicum frutescens and stir fryuntil the scent comes out. Add sugar and continue stirring fry, add the pig tripe and stir fry, then add salt, light soy sauce,vinegar, and celery for a quick stir fry and this dish is done
