This beautiful mojito is made with fresh summer blackberries, lime juice, mint, rum and club soda. Ultra refreshing and beautiful, it’s the summer co*cktail your guests will love!

Who’s ready for sunshine and cold drinks? ME!!! It may not even be May yet, but I’m day dreaming of fantastic summer days. One of my favorite summer fruits is the blackberry. It’s slightly sweet, and slightly tart, and goes SO well with the classic mojito flavors of lime, rum and bubbly club soda!

We were first introduced to the mojito co*cktail down in Key West 10 years or so ago, and it’s remained one of our favorite co*cktails. I’ve been itching to play around with some fun variations, and when my grocery store had blackberries on a fabulous sale, I knew I was going for the blackberry mojito!

To really bring in the blackberry flavor, but without having crushed blackberries in the drink, I used my fruit simple syrup method that I used to make this blueberry lemonade. For me, not having the crushed blackberries in the drink is just a personal preference. The pieces can get stuck in straws and when sipping without a straw, you can get a mouthful of macerated berries. BUT, they do give the drink a rustic look, so if you want them in there, go for it 🙂

HOW DO YOU MAKE A MOJITO

Traditionally mojitos are made by muddling mint leaves with some granulated or superfine sugar, then ice is added. Lime juice and rum is poured in, and the drink is topped off with club soda. Other variations use a simple syrup instead of the granulated sugar, which is my preferred way, since the simple syrup blends better with the drink.

WHAT TYPE OF RUM IS USED IN A MOJITO

Since mojitos are known for their signature “clear” color, you want to use white or silver rum so it won’t add in any yellow or brownish color to the drink. This is especially true in this blackberry mojito, since the pink color is important!

HOW CAN I MAKE THIS BLACKBERRY MOJITO FOR A CROWD

Since this recipe is for a single drink, you’ll have to figure out how many people are coming to your event (and make a little extra in case people want seconds!), and multiply the ingredients by that number. So as an example:

Let’s say 20 people are coming, but you know some people will want seconds, so you want to make enough for 30 drinks. Each ingredient would need to be multiplied by 30. You’ll also want to make more simple syrup (the recipe makes about a cup – cup and a quarter).

  • To a big pitcher, add simple syrup, lime juice and rum. Stir well and chill.
  • Then in each serving glass, add mint leaves and ice. Pour in mixture from the pitcher until glass is about 1/2-2/3 of the way full. Top off with club soda.

If you’d like more blackberry flavor, add an extra shot of the blackberry syrup! The great thing about this blackberry mojito recipe is that even if you’re not a fan of blackberry, you can easily swap them out for another fruit! Strawberry, blueberry, raspberry, peach… you name it!

Ingredients

BLACKBERRY SIMPLE SYRUP

  • 1 cup water
  • 3/4 - 1 cup granulated sugar
  • 8 oz fresh blackberries

MOJITO

  • 3-4 fresh mint leaves , torn
  • 1 1/2 - 2 oz blackberry syrup
  • 1/2 oz lime juice
  • 1 1/2 oz white rum
  • 2 oz club soda
  • lime slices
  • mint leaves
  • fresh raspberries

Instructions

MAKE BLACKBERRY SIMPLE SYRUP

  • Add water, sugar and blackberries to a small saucepan. Bring to a boil over MED heat. Once boiling, reduce heat to a high simmer, and simmer for about 10 minutes or so.

  • Remove pan from heat and smash blackberries in the syrup with a potato masher. Let cool 10-20 minutes, then pour syrup through a fine mesh sieve into a bowl. Use a rubber spatula to push on the blackberry "mush" to get as much liquid out as you can.

  • Discard blackberry pulp and store simple syrup in a sealed container in the refrigerator. If kept sealed and refrigerated, simple syrup should last up to 3 weeks or so.

MAKE THE MOJITO

  • To serving glass, add torn mint leaves and muddle lightly, about 6 turns with the muddler. This step is optional. Add blackberry simple syrup, ice, lime juice and rum. Stir together to combine.

  • Top drink off with club soda and garnish with a lime slice, blackberry or two, and sprig of mint.

Chef Tips

To Make For a Crowd:

Multiply drink ingredient amounts by the number of people to be served. Add blackberry simple syrup, lime juice and rum to a small pitcher and stir together well.

In individual serving glasses, add torn mint and ice. Pour drink mixture over the ice until glass is filled up about 1/2 to 2/3 of the way. Top off with club soda and garnish if desired.
